Chilaquiles in Los Cabos + Weekend Event Highlights: May 24 and May 26, 2024

Chilaquiles, a beloved Mexican dish, has a rich history that dates back to Aztec times. The name comes from the Nahuatl word "chīlāquilitl," which means "chili-soaked." Originally a way to use stale tortillas, chilaquiles have evolved into a versatile and flavorful breakfast or brunch dish enjoyed across Mexico and beyond.


Here's a simple recipe to make chilaquiles at home:

Here's a list of ingredients:

8 corn tortillas, cut into wedges

1 cup red or green salsa

1/2 cup shredded cheese

1/4 cup crema

1/2 onion, thinly sliced

1 avocado, sliced

Fresh cilantro, chopped

2 eggs (optional, or add another protien)

Oil for frying

Salt to taste

Recipe Instructions:

1. Heat oil in a skillet over medium heat. Fry the tortilla wedges until crispy, then remove and drain on paper towels.

2. In the same skillet, remove excess oil, leaving about a tablespoon. Add the salsa and simmer for a few minutes.

3. Add the fried tortillas to the salsa, tossing to coat evenly. Cook for 2-3 minutes until the tortillas soften slightly.

4. If using eggs, fry or scramble them in a separate pan.

5. Serve the chilaquiles topped with cheese, crema, onions, avocado, and cilantro. Add the eggs (or another protein) on top if desired.

6. Enjoy with a side of refried beans if you like.
